Kork Wine & Cheese Tuesday Tasting Series continues with a tasting of Castillo de Tabernas, a Spanish olive oil collected in the Tabernas Desert. Its climate is characterized by the highest amount of sunlight per year in Europe, and temperatures remain very stable during the whole olive growing and ripening period.
Castillo de Tabernas’ Extra Virgin Olive Oil has been obtained through a rigorous monitoring and application of Quality Decalogue. The making of this exquisite product with a .01º natural acidity has only been possible by applying exhaustive controls.
The oil originates from totally healthy green olives, which initially made the oil excessively fruity. After allowing for aripening period in our cellars, the Country Estate Olivar del Desierto was able to obtain an oil which still preserves its fruity content but with a mildness necessary to maintain and empower the original flavor of any traditional or modern food.
