This month, Kimpton Surfcomber Hotel is debuting a brand-new recurring dining concept, Cabana Nights at Kimpton Surfcomber on December 28-30, 2021. This will be the first iteration of the upscale alfresco affair masterminded by the brilliant culinary stylings of the hotel’s Executive Chef, Javier Carballo, and enhanced with exciting live entertainment. The seasonal dining soirée will be held in the property’s posh and picturesque Vines Cabanas. The unique and intimate space allows seating that exclusively accommodates parties of four, at minimum and parties of ten at maximum – making Cabana Nights the perfect setting for groups of friends and families. Designed to encourage guests to linger and connect past their meals, the experience will feature an exclusive menu of Chef Carballo’s inspired culinary delicacies, top-shelf wines and hand-crafted cocktails. Guests will enjoy four perfectly prepared courses, all served family style, reflecting the new “grazing” dining trend. The dishes, each served with a curated fine wine pairing, include:
Hamachi Tiradito (Raw yellowtail sashimi style with citrus yuzu sauce, avocado mousse, bubu arare)
Scallops di Tarragon (Smoked trout caviar, prosciutto di parma, passion fruit mousse)
Tuscan Bone-In Porterhouse (Sea salt, white, pink, black, green, tellicherry, Szechuan, allspice peppercorns, cognac-porto sauce, truffle butter, confit smashed creamer potato)
Reverse Golden Oreo (Vanilla bean crushed cookies, ganache chocolate mousse, gold flakes)
