Michael Pirolo Makes Tortellini

This past summer, Italian cuisine master and all around bad-ass chef, Michael Pirolo, prepared a private Italian feast filled with Prosciutto di Parma for some very lucky guests.

The ham is almost as old as Italian cuisine itself with the earliest references to Prosciutto di Parma dating back all the way to Roman times around 100 BC. The ham has a very strict certification. By law it can only be produced in the gently rolling countryside surrounding the city of Parma in north central Italy. The ham must use Italian-born and bred pigs raised according to the highest standards on which they are monitored, inspected and traced.

Once the ham is ready to be cured, a highly experienced maestri salatori (aka salt master) applies a minimal amount of sea salt necessary to produce a ham with the desired savory-sweet flavor profile. This is also the reason why Prosciutto di Parma tastes less salty than other ham varieties. At the end of the curing process, every leg of Prosciutto di Parma is checked for quality and then fire branded with the five-pointed Parma Crown, signifying its guarantee of authenticity and quality.

Dolphin Mall is set to celebrate the holiday season by creating a magical winter wonderland experience for shoppers, complete with nightly snowfall powered by the imagination of children. The annual tradition begins Wednesday, Nov. 25 and will continue through Sunday, Jan. 3, 2016.

“We’re excited to once again host this beloved holiday tradition at Dolphin Mall for families and visitors,” said Madelyn Bello Calvar, the mall’s marketing and sponsorship director. “This annual event is so special and a unique way for us to showcase an enchanted winter wonderland that Floridians don’t typically experience.”

To help create a memorable snowfall for the entire family, Dolphin Mall will be giving away magical wands to children under the age of 12 (while supplies last). At the start of each nightly snowfall, young magicians can wave their wondrous wands to unleash the snowstorm and create a glistening winter wonderland.

Festive snow flurries will take place inside the Ramblas Plaza every night at 7 p.m., with an additional snowfall at 9 p.m. on Thursday, Friday, Saturday and Sunday. Wands will be distributed to participating families 30 minutes prior to start of each nightly snowfall. There will be no snow on Christmas Eve (Dec. 24), Christmas Day (Dec. 25), New Year’s Eve (Dec. 31) and New Year’s Day (Jan. 1, 2016).

CIFO Talks will be hosting Luis Camnitzer and Gean Moreno in a discussion following the ongoing exhibition, Intersections (after Lautréamont). The two will focus on differing views regarding Miami today and its current relationship with Latin America and the United States. This CIFO Talk will discuss the global impact of the growing influx of Latinos in Miami, creating the new capital of Latin America. The Business Improvement District (BID) of Coral Gables makes dining dreams come true in one event with the start of the 2015 Giralda Under the Stars presented by Zacapa Rum dining al fresco series. More than a dozen restaurants and bars on the renowned Restaurant Row on Giralda Avenue, located between Ponce de Leon Boulevard and Galiano Street, will bring culinary excellence and libations outdoors for diners to enjoy, literally, under the stars. Restaurant Row will be closed to vehicular traffic, and participating restaurants will fill the street with tables and chairs, live music and entertainment from 7 p.m. to midnight every first Friday of the month through April 2016. The first event in the series on November 6th, 2015, will be hosted by Miami Herald food editor and renowned foodie Evan S. Benn! And to complement the ultimate dining al fresco experience, the first event will have all things live, including live beats by Steven B. and string tunes by guitarist Jonathan Beckett and violinist Monty Bloom.

The Fontainebleau, Eden Roc and Deauville hotels and garden style apartments are stunning examples of MiMo – featuring acute angles, delta wings, sweeping curved walls, and soaring pylons. One of the most interesting, refreshing and informative ways to spend an afternoon in Miami Beach is to take an Art Deco Cocktail Tour. As the name implies, you will be walking around the Art Deco gems of South Beach while stopping at a few of them to enjoy a libation.

Recently, Christine Michaels of Art Deco Tours invited a group of bloggers to participate in the experience. We all gathered at the Z Ocean Hotel where Christine immediately made us feel welcomed, she introduced us to James Cubby who would serve as our guide along with Christine.

It was an amazing experience!

Even if you’ve been in Miami most of your life (such as myself) the Art Deco Cocktail Tour is a wonderful way to get re-acquainted with Miami Beach’s wonderful history and architecture, not to mention the depth of information that can only be acquired from seeing and walking through these magnificent masterpieces. Miami City Ballet will kick off its landmark 30th Anniversary Season with a red-carpet opening night celebration at the Adrienne Arsht Center for the Performing Arts in Miami, on October 23, 2015 at 6:30pm.

Selected artists will create site-specific installations that interact with the landscape & outdoor environment.
The curator will give preference to installations that include interactive and/or multi-sensory elements, and incorporate or adapt well to the site. Installations should incorporate a light source and have visual impact/high aesthetic appeal.
The site is located on a lake waterfront with a sand beach, and features a landscape with a long stretch of grass, elements of bushes and trees and a building with concrete walls and a wrap around tarmac.

Miami-Dade Transit and the Miami-Dade Parks, Recreation and Open Spaces Departments, in partnership with Friends of The Underline invite you to attend a public meeting on Monday, Nov. 9, 2015, from 6-8 p.m., at the Coral Gables-University Holiday Inn, to present The Underline’s developing framework and master plan, plus design proposals of two demonstration projects in the areas of Brickell and the University of Miami (UM). The Underline is a proposed 10-mile stretch of biking and pedestrian trails and park spaces located beneath the county’s Metrorail, in the Transit Department’s Right of Way, between the Miami River north of Brickell and Dadeland South stations. Miami Dade College’s (MDC) MDC Live Arts will present the U.S. debut of Combinado Argentino de Danza (CAD), Saturday, Oct. 17 at 8 p.m., at the Colony Theatre. The renegade collective of dancers, musicians, DJs, and artists from Buenos Aires create a dynamic universe—where hip-hop, contemporary and Argentine folkloric dance engage and evolve in a constant state of conversation and transformation. CAD’s signature is the diversity of disciplines and styles that exist within it. Unlike other multi-disciplinary dance companies that aim for a fusion of genres, CAD instead maintains and plays with the variety of independent expressions—seeking common logic or provocative interactions within a shared space. Reflecting our contemporary, globally-influenced and culturally-expanding society, it is a salad bowl versus a melting pot, and the results are striking. Hip-hop, contemporary and folkloric dancers, from conservatory and street alike, interplay or are juxtaposed in grand compositions. On November 15th, come join “Moving Day” Miami with the National Parkinson Foundation to celebrate this national day of awareness. We are expecting 2,000 Miami residents to come out and move together. Moving Day® Miami, Walk for Parkinson’s, presented by the Terranova Corporation is a national grassroots movement that spotlights the crucial importance of exercise for those with Parkinson’s disease.

The event will take place at Bayfront Park, and include movement activities such as yoga, Pilates, Zumba and Tai Chi. Moving Day® will also feature a one-mile walk at 10:00 AM. Registration opens at 7:30 AM and the event will go on until 1:00 PM.

After a successful 2014 run, Turkish Film Festivals USA returns to Miami from October 13th thru 15th. All screenings will take place at the Colony Theater located in 1040 Lincoln Road in Miami Beach. As it is customary, all screenings are free and open to the public.

This year, the festival is bringing to Miami the best of what Turkish cinema has to offer. Opening the festival will be The Miracle, a masterpiece by world-renowned director Mahsun Kirmizigul. Turkey’s most popular film in 2015 is based on the real life of a teacher (Mahir), who changes the life of a solitary village in the east side of the country and still lives there. “A Spooky Symphony”, featuring the most beautiful scary music you’ve ever heard by The Greater Miami Youth Symphony and the Alhambra Orchestra, is a free Halloween family concert with thrilling excerpts from Jurassic Park, Harry Potter and the Sorcerer’s Stone, Batman The Dark Knight, the long-running smash Broadway musical, Wicked, and a variety of classical selections. Additional concert highlights include a multimedia presentation. Kids are encouraged to dress in their best Halloween costumes to enhance the supernatural experience.

The gates open at 11 a.m. and the parade starts at noon. Sushi Maki to unveil a sushi menu rich with South Florida’s bounty of seafood, produce and local brews

Austin Chef Philip Speer and Sushi Maki continue their culinary collaboration

CORAL GABLES, Fla. – Sushi Maki (sushimaki.com) commemorates 15 years as one of the leading home grown brands Thursday by celebrating the produce and seafood synonymous with South Florida.

Under the leadership of founder and CEO Abe Ng, and in collaboration with guest Chef Philip Speer, Sushi Maki will unveil a series of menu changes that reflect a deeper commitment to sustainable seafood and a focus on in-season, fresh-farm produce.

“Our featured menu items will be lighter and brighter in flavors with more use of vegetables and fruits paired with our best-in-class seafood,” says Ng. “Our customers will see simple plate presentations accented with clean and crisp sauces and garnishes.”

Sushi Maki expanded its partnership with South Florida fishermen, brewers and farmers, culling only the best for its menu of freshly prepared and artfully plated Japanese fare. The new menu will feature fresh yellowtail snapper, Florida lobster, Florida avocados along with in-season fruits and vegetables from Homestead farms and brews from Daughters Brewing Co., Islamorada Beer Company and Gravity Brew Labs.

“We’ve added yellowtail snapper and cobia, which you won’t find on many sushi bar menus,” says Ng.  “Plus, we’ve been serving avocados grown in farms in Homestead about eight months out of the year. We believe strongly in taking full advantage of the rich bounty we have here in Florida.” 

Sushi Maki’s refined menu evolved out of an emerging friendship and collaboration with Chef Speer, widely known in culinary circles for his work at Uchi in Austin, Texas. Chef Speer teamed up with the Sushi Maki culinary team to develop a summer menu pairing local seafood and citrus. Creations such as Japanese Street Corn, Lychee Grape Tiradito and Cobia Chirashi were customer favorites that are now part of the Sushi Maki menu.

“Chef Speer’s individual journey of renewal, health and wellness aligns perfectly with the positive vibes/ healthier lives we celebrate here at Sushi Maki,” Ng said.

Sushi Maki will introduce its new menu at its five full-service restaurants starting Oct. 5. The Coral Gables-based-chain plans to release the new items at its locations in Whole Foods Markets, sports arenas and other locations by spring 2016. 

“We’re so fortunate to have a variety of places in town to share the goodness of sushi. We’re excited to be able to imagine and creative incredible recipes, and share them with so many people through new and unexpected places,” says Ng.

Despite the menu changes, Sushi Maki will keep many of the favorites customers have grown to love like the ceviche bowls introduced earlier this year, traditional rolls and sashimi.

“And if customers don’t see a favorite on the new menu, all they have to do is ask for it,” says Ng.

David Dermer, former Miami Beach’s mayor will give a lecture on the politics of development in Miami Beach 1995-2005, focusing on the Save Miami Beach movement and his efforts battling big money to try to limit development on Miami Beach.

David Dermer Bio:
On September 9, 2005, Miami Beach Mayor David Dermer was returned to office for a third and final term. Dermer was the second youngest mayor in city history when first elected to the post in 2001 at age 38. Only his father, former Miami Beach Mayor Jay Dermer was younger, when he was elected mayor in 1967.
Prior to becoming Mayor, David Dermer also served a successful 4-year term as a Miami Beach City Commissioner. A dedicated community activist and attorney, Dermer first emerged onto the Miami Beach political scene as the leader of the successful “Save Miami Beach” (SMB) ballot initiative, a movement aimed at curbing overdevelopment along the City’s waterfront. Dermer’s grassroots organization gathered more than 6000 voter signatures, placing the charter amendment on the ballot. The SMB campaign won over voters and the initiative passed overwhelmingly, despite the fact that SMB’s opposition spent $2 million to Dermer’s $25,000. David Dermer graduated from Miami Beach Senior High School in 1980. He received his Bachelors Degree in Justice from American University in Washington D.C. and subsequently earned his Juris Doctorate from Cumberland School of Law. He served as a State Prosecutor for the 17th Judicial Circuit after graduation and in 1990 he opened his own firm, David Dermer Law Offices. He currently teaches History and Government at Miami Beach Senior High School.

In the spirit of Give Miami Day on November 19th, they have united with one of their favorite charities.

Radio Lollipop at Nicklaus Children’s Hospital, a part of Miami Children’s Health Systems, is an in-house radio station. Live broadcasts on Tuesday, Wednesday, and Thursday, allow the volunteers to provide the patients the opportunity to enjoy crafts, be a DJ for the night and win prizes. The volunteer-run organization depends on the donations from great supporters like Batch Gastropub and the local Miami public.

George Feldenkreis is the Chairman of the Board and Chief Executive Officer of Perry Ellis International, a Doral-based apparel firm he founded and built into a multinational corporation with annual global retail sales approaching $2 billion. Born in Cuba to Eastern European immigrants, George earned a law degree from the University of Havana before fleeing to Miami in February 1961 with only $700 and a passable grasp of English. In 1967 he formed Supreme International, a company that imported children’s school uniforms and men’s sportswear from Japan. After going public in 1993 and purchasing the rights to the Perry Ellis trademark six years later, Supreme International changed its name to Perry Ellis International. Today the company employs more than 2,600 people and has offices, stores and sourcing operations around the world. An accomplished philanthropist, George and his wife, Mariita Feldenkreis, are members of the United Way’s Million Dollar Roundtable.

This two-hour walking tour highlights several of downtown Miami’s best historic buildings, most of which are on the National Register of Historic Places. Tours begin with a brief introductory presentation at MCAD, itself located in the 1912 Old Post Office Building at the center of the City of Miami’s Historic District and covers a three-block area in the core of the Central Business District. Whether you are an architect or just love architecture, this tour is for you!

Join the international celebration of home movies and learn how to keep your family’s precious memories alive with new digital media.

Check out a Personal Preservation Workshop at 2:00 PM in the Makers’ Center. You’ll learn how to preserve treasured family photos, films and videos and how you can enjoy them again using new digital media.

Bring a few personal photos, films or videos to the workshop for evaluation by the Wolfson Archives and the Miami-Dade Public Library.

From noon to 4:00 PM view historic home movies from the collections of the Lynn and Louis Wolfson II Florida Moving Image Archives in the Library Auditorium.
